Here is some other kitchen wisdom I have learned over the years:

1. A disposable roasting pan is your best friend. Pour out what you need to make gravy and just get rid of the rest.

2. Do not make something new when there is a time crunch. Stick with the tried and true. There are reasons why they are classics.

3.Have some jobs waiting that you feel comfortable delegating. People aren't asking because they don't want to help- let them give you a hand.

4. If anyone looks askance at a dish- put on your biggest and brighest smile and say "it's suppose to look like that". That should stop them in their tracks.

5. Try to remember this is Thanksgiving dinner. It is supposed to be a celebration of family, friends, and togetherness. Remember there are many people who don't have a home in which to celebrate this year so if the potatoes are a little lumpy or the cranberry sauce could be a bit sweeter it's okay. (Keep a pack of instant mashed potatoes and a can of cranberry suace in reserve. If you don't use them- donate them to food pantry who will put them to use!)
